| Potato cups filled with veggies and egg |
Ingredients:
- Potatoes
- Little bit of Wheat flour
- Little bit of cheese
- Some veggies
- Egg
- Little bit of butter
- Salt, Pepper and Spices as preferred
- Lemon drops optional
Method:
- Boil, peel and mash the potatoes finely.
- Mix in the flour, cheese, salt n pepper (and any spices, and lemon drops as per your taste) and make a nice dough.
- Butter a cup shaped pan and spread the potato mash to the bottom and walls to make cup shape. Make sure, its not too thick, nor broken at any point.
- Put it in oven at high heat for it to make crispy or at least well cooked cups (as preferred)
- Cut veggies into small pieces. Boil them a bit if they are of hard nature.
- Beat egg(s), add the veggie pieces, salt n pepper, and any other spices as preferred. Make sure, it does not become too thick.
- Pour in the above mixture into the potato cups and keep it back in oven under medium heat for few mins (till the contents are visibly cooked)
- Enjoy it with spicy or tangy sauces.
